You will need ,
two yellow and two green Zucchini ,
one medium size red onion,
green frying peppers,
2 cloves of garlic,
fresh basil, oregeno, rosemary and russian sage.
2 tlbs of olive oil
Salt & Pepper.
Wash the vegetables and herbs.
Slice the vegetables lenght ways.
Finely chop the herbs and garlic, place all ingredients in a large bowl then add the two tlbs of olive oil and stir until all the vegetables are coated with olive oil, you can add extra oil if needed, add salt and pepper. Cover bowl and refrigerate for an hour.
Place the vegetables on a wire basket, and cook on the barbecue on low for 20mins, occassionally stirring the vegetables.
Serve with a nice crusrty bread.
